1. Almost anything you prepare in a convection oven can be prepared in a Vulcan Cook & Hold oven. The oven temperature reaches 350° so you can bake as well. And gently circulating air will not dry out the food.
2. Bake overnight whenever possible to get the most use out of your oven. Roasts will be more tender if baked at 225° for 3-1/2 to 4 hours, then held at 140° for up to 24 hours. Try cooking soups and stocks overnight to increase kitchen productivity and create a more flavorful product.
3. Cleaning is a breeze. Vulcan Cook & Hold Ovens only need to be cleaned every two weeks, depending on volume. How can this be? The cabinet does not rely on high humidity levels and this cooking process does not produce grease-laden vapors.
4. Depend on your Vulcan Cook & Hold Oven to be durable enough to stand up to daily use. It's made of welded tubular steel and heavy-duty polished stainless steel.
5. Experiment by staggering loads or cooking several products at one time. There is no flavor transfer!
