Quick Steps for Combi Success

Combination oven/steamers are widely used in Europe and are gaining popularity in the U.S. The versatile Vulcan CombiAirTM Oven can be used as a:

  • combination steamer/convection oven

  • rethermalizing oven

  • proofer

  • steamer

  • convection oven

  • cook & hold oven


  • Some tips for better CombiAir results:
    1. Before using the oven, read the manual.

    2. Never force open the oven door. It has a built-in safety opening mechanism that allows steam to vent before the door is fully opened.

    3. If your kitchen routine and menu allow, do your steaming before baking; you will save time and energy.

    4. Always steam in perforated pans.

    5. It's better to use shallow pans than to overfill deep pans.

    6. Place a solid pan under the perforated pan to collect any wanted juices.

    7. Clean the oven each day with a 10-minute steam-out before shutting it down. Hose down and wipe off excess moisture with a clean cloth.
