Getting the Most from your Versatile V Series Braising Pan

Braising Pans can handle virtually any cooking task. Vulcan offers the V Series in gas and electric models, in 30- and 40-gallon sizes, and those are true working capacities. Prep is a breeze with the true embossed gallon markings. The only thing I haven't figured out how to do in the Braising Pan is bake a cake.

The versatile Vulcan V Series Braising Pan can be used as a:

  • grill

  • steamer

  • pasta cooker

  • stock pot and soup kettle

  • braising pan


  • Some tips for getting maximum versatility from your V Series Braising Pan:

    1. Grilling: As with any grill, always preheat the surface before grilling. Since the braising pan stainless steel construction is not as porous as the carbon steel on a griddle, your pan surface needs to be seasoned more often. Use a thin oil or nonstick cooking spray.

    2. Steaming: Put two inches of water in the bottom of the braising pan. Then place two-inch steam pans on the bottom, upside down, to provide a base for the food pans. Add the steam pans with food product, bring the water to a boil and close the lid.

    3. Pasta Cooking: Fill the braising pan approximately two-thirds full with water.

    a. The entire pan may be used to boil the pasta, then drain the water and keep the pasta in the pan for seasoning and further preparation before transferring to hotel pans.

    b. Or use pasta baskets to handle several different types of pasta at one time.

    c. If the pasta will not be seasoned immediately, run cold water over it to prevent sticking.

    4. Braising: Sear both sides of meat products using the preheated bottom surface of the braising pan. Then either transfer the meat to an oven for thorough cooking or add vegetables and some liquid to the braising pan to continue cooking the meat on a slow simmer.

    5. Soups and Stocks: The braising pan is perfect for cooking stocks, soups, stews and chili. Braise the meat first before adding other ingredients. An optional draw off valve facilitates skimming excess fat, if necessary. When the soup is done, the convenient front-hinged tilting design lets you get to the last savory drop. The crank mechanism is designed so it cannot be over cranked and cause damage to the lift mechanism. And Vulcan has designed the receiving pan to be at a convenient working height.

    6. Clean the braising pan after each use by adding water and bringing it to a boil. Let the water cool, then add a little soap or cleaning product, brush the sides and empty the dirty water. You may rinse the sides of the pan with a spray hose if there is one nearby. This is all made easier by the interior coved corners and bead-blasted finish. Wipe with a clean cloth and you are ready for the next menu item.

    7. As with any quality equipment, read your owner's manual and become familiar with cooking and maintenance routines to get the most out of your investment.
